Easy as pie!

I had always wanted to make pie. When I was young, I had a friend whose Moms freezer was always filled with Pies, Mrs. Wannop. Although before the marriage of her boys she never had daughters, but did she? Even though we only had dinner there once, that I recall her feminine skills in caring for her hungry boys and husband impressed me. So When My son came home from school with a pie recipe that was easy, I was hooked, and it has been easy as pie ever since. Thank you Mrs. Wannop for sharing your motherly love with many daughters.



Crust

2Cups Flour

¾ Cups lard or butter

5 tbsp Cold water

Bit of salt

That’s it!!!!

Cut it to an even crumble,

 then form two balls (top-Bottom)

role it out between parchment or wax paper and place in tin or tins depending

peel off one layer of paper, slide hand under neath then fold together paper sides touching than lay in pan and fold back down,Or put your hand under and place the pan on top then with both hands flip it over .

 Even it out as best as you can then press firmly into bottom .
 
If you find that there are bits missing just moisten a finger and press on a little of the excess for elsewhere
 

The fillings

 

I never realized it could be so easy that you really need no recipe to make a filling that is sooo good!

Fruit fillings

Apple is easy

Core and cut enough apples to fill the pie heaped than toss with 1c or less sugar and some cinnamon than cover – brush water on the top and sprinkle with sugar.

 Bake 350* until golden brown

Berries are breezy

Heap the shell with berries. I like blue berries,
now place four very heaped soup spoons full of brown sugar on top,

 than cover well with a light~ heavy layer, (but not too heavy) of corn starch.

spread out the sugar and starch mixing it into the berries.

Cover with top

Tuck in gently around the berries 

Pinch edges together 

With a sharp knife cutting against the pan slice of excess dough 

Now for the scallops it a pinch really you should have no trouble
hold your hand like you would with a pencil, then place your hand onto the pan with middle finger underneath the lip, thumb, and pointer in the pinch position on top. Then pinch and move around placing one finger in last pinch this will space them nicely  



and prick three times with a knife on the top to release the hot air,
brush with water than sprinkle with brown sugar.

 Bake @ 350* until golden brown and boiling inside. Let cool slightly so it thickens before serving

Meat is a treat

There are a few different kinds of meat pies; they are truly no harder than making stew or browning burger.

A true no veggie meat pie (onions and mushroom ain’t veggies)

Slice onion and brown lightly with burger until cooked.

 Add some mushrooms and spice the way you like it .
place in pie shell sprinkle well with corn starch add enough water to half way up the shell
 

 cover, and bake at 300* until dark golden brown

Ancient recipe calls for a whole steak placed in the shell with spices than covered and cooked until tender

 

Meat and veggie Pie

Par cook potatoes and carrots just till almost tender add largely sliced onion or fine if you need to hide it from the kids Toss with browned spiced stew meat in a little of it own thickened gravy fill shell heaped adding only enough of the gravy to almost fill the shell you can add peas at this point if you like, than top, and bake 300* until dark golden brown

 

 

Soda crackers Really Good

Soda Crackers

2 tsp yeast

2/3 cups cold water

1 ½ c flour

½ tsp Salt

 ½ tsp Soda

2 tbsp melted butter

Combine to make dough

Refrigerate for one hour

Roll out and fold repeat four times this makes

 The layers in the crackers 

Roll out thin but not too thin lay rectangular dough on cookie sheet prick into squares

Then prick individual crackers

Sprinkle with salt

Bake @ 425* until golden
