Chicken Mini-Pot Pies OR Pizza Muffins
Makes 12 - Serving Size 2 Muffins -Bake at 375 for 25-30 minutes.
Double, Triple, Quadruple as needed
2 cups cooked, shredded chicken
1 cup diced onion
1/2 cup low sodium chicken broth (I use homemade veggie)
1 cup frozen peas
and carrots
1/2 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon dried
thyme
1/4 cup shredded
mozzarella (or dairy-free cheese)
1 batch of biscuit
dough (homemade, Bisquick, etc)
